Position Overview
A Sushi Chef is responsible for preparing high-quality sushi and other Japanese dishes, ensuring excellent presentation, freshness, and taste. The role requires strong knife skills, attention to detail, and a deep understanding of Japanese culinary traditions.
Key Responsibilities
- Prepare sushi, sashimi, nigiri, maki rolls, and specialty dishes
- Select, inspect, and properly store fresh fish and seafood
- Maintain high standards of food safety, hygiene, and sanitation
- Develop and present dishes with precision and artistic presentation
- Prepare rice, sauces, and garnishes according to recipes and standards
- Manage inventory and assist with ordering ingredients
- Maintain cleanliness of the sushi station and kitchen equipment
- Interact with customers (if working at a sushi bar) and provide recommendations
- Ensure consistent portioning and quality control
- Collaborate with kitchen staff and restaurant management
**Requirements**
- Previous experience as a sushi chef or Japanese kitchen cook
- Strong knife handling and fish preparation skills
- Knowledge of sushi rice preparation and seasoning techniques
- Understanding of seafood selection and handling practices
- Ability to work in a fast-paced environment
- Excellent attention to detail and presentation skills
- Food safety certification (preferred or required depending on location)
- Ability to work evenings, weekends, and holidays
